Tofu Tacos
Ingredients

- 8 corn tortilla
- 1 1/2 lbs tofu (extra firm, pressed)
- 1 1/2 cups pinto beans (cooked)
- 1 red bell pepper (sliced)
- 1/2 cup red onion (sliced)
- 2 tbsps taco seasoning
- 1/2 cup salsa (for topping)
- 1/4 cup guacamole (for topping)
Instructions
- Preheat oven to 400 F. Assemble prepared veggies, tofu and beans on two parchment paper-lined baking sheets. Drizzle avocado oil on and add taco seasoning. Bake in the oven for 30-40 minutes, flipping halfway. Pan fry the onion, kale and cabbage for 5 minutes on medium heat. Remove and place aside.
- Once cooked, veggies on tortillas and add salsa and guacamole for topping.
