Tempeh Bacon “BLT” Sandwich

8 oz. tempeh

8 slices of sprouted whole grain bread, toasted

2 large tomatoes, sliced

2 cups romaine lettuce

1 avocado, mashed

¼ cup mayonnaise
Tempeh “bacon” marinade:

1 tbsp soybean (vegetable) oil
-
¼ cup soy sauce
-
2 tbsp maple syrup
-
1 tsp liquid smoke
-
1 tsp smoked paprika
-
½ tsp black pepper
- ¼ tsp salt
Instructions
1. Preheat oven to 400 F and line a large baking sheet with parchment paper.2. Slice tempeh into 16-20 thin “bacon” strips.
3. In a large bowl, whisk together tempeh bacon marinade ingredients. Add tempeh to the bowl and toss to coat. Set aside for 15 minutes.
4. Place tempeh in a single layer on the baking sheet and bake for 15-20 minutes or until browned and crisped.
5. Assemble sandwiches with mayonnaise, mashed avocado, tomato, romaine lettuce and tempeh “bacon”.
