Soy Sausage Spinach and Mushroom Scramble

  • 4 ounces ground soy-based chorizo or soy sausage, uncooked
  • 2 ounces fresh mushrooms, sliced
  • 4 cups fresh baby spinach leaves
  • 8 eggs, beaten
  • salt and pepper, to taste

Instructions

  1. Heat a large non-stick skillet over medium heat. Add soy-based sausage and cook for 3 to 4 minutes, using a spatula to separate sausage into small pieces, until lightly browned. Add mushrooms continuing cooking for about 3 minutes, stirring occasionally, until mushrooms soften.
  2. Reduce heat to medium. Add spinach and eggs and cook for 3 to 4 minutes, using a spatula to fold ingredients together, until eggs are set and reach an internal temperature of at least 160 degrees F.

Recipe may be cut in half or doubled.
