Skin Boosting Soy Smoothie

Ingredients

  • 3/4 cup plain or vanilla soy milk
  • 1/2 cup fresh or frozen strawberries
  • 1/2 date, pitted and chopped
  • 1 fresh kiwi fruit, peeled and sliced
  • 2 teaspoons chia seeds
  • 1/2 scoop (about 12 grams) collagen peptide powder, optional

Instructions

  1. Puree soy milk, berries, and date pieces in a blender on high for 30 seconds or until smooth. Add kiwi, chia seeds, and collagen powder (optional). Puree for an additional 15 seconds, just until blended. Serve immediately.

Recipe may be doubled.

Tip:
  • Microwave the date with 1 tablespoon of water to soften before adding to the blender.
