Grilled Chicken & Tofu Teryaki Rice Bowl
Ingredients

• 4 chicken tenderloins
• 7 oz extra firm tofu, sliced lengthwise into 1-inch pieces
• 1 red bell pepper, sliced
• 1 yellow bell pepper, sliced
• ¼ cup shredded carrots
• 1 tablespoon seasoned pepper
• 1 teaspoon garlic powder
• ½ teaspoon paprika
• Salt to taste
• 1/4 cup teriyaki sauce
• 2 cups white rice
• 2 tablespoons soybean oil
• Optional: chives for garnish
Instructions
1. Season chicken, tofu, and bell peppers with seasoned pepper, garlic powder, paprika, and salt to taste.
2. Heat the grill to medium heat and brush the grill with 2 tablespoons of soybean oil. Place the tofu, chicken, and bell peppers on the grill and cook for 5-7 minutes on each side or until internal temperature reaches 165 degrees F.
3. Brush with teriyaki sauce and remove from the heat.
4. To make the rice bowl, place 1 cup of rice into a bowl. Top with 2 pieces of chicken, half serving of the tofu, half serving of the bell peppers, and 2 tablespoons of shredded carrots.
5. Garnish with chives, if desired. Enjoy!
