Gluten-Free Granola

Ingredients

  • 1 1/4 cups Oats
  • 3/4 cup Frozen Edamame
  • 1/3 cup Pumpkin Seeds
  • 1/3 cup Dried Unsweetened Cranberries
  • 1 tbsp Chia Seeds
  • 2 tbsps Maple Syrup
  • 1 tbsp Soybean Oil
  • 1 tbsp Cinnamon

Instructions

  1. Heat the oven to 400°
  2. Meanwhile, in a large mixing bowl, combine the oats, edamame, pumpkin seeds and dried fruit.
  3. In a small mixing bowl, combine the oil, maple syrup and cinnamon. Mix this inwith the dry ingredients.
  4. Line the baking sheet with parchment paper and spread the granola in an even layer.
  5. Place in the oven and set the timer for 15 minutes.
  6. When the 15 minutes are up, give the granola a stir to turn it over a bit. Continue baking for another hour and stir every 15 minutes. It will seem a little moist and chewy right out of the oven but will become crispy once cooled.
