Gluten-Free Granola
Ingredients

- 1 1/4 cups oats
- 3/4 cup frozen edamame
- 1/3 cup pumpkin seeds
- 1/3 cup dried unsweetened cranberries
- 1 tbsp chia seeds
- 2 tbsps maple syrup
- 1 tbsp soybean oil
- 1 tbsp cinnamon
Instructions
- Heat the oven to 400°
- Meanwhile, in a large mixing bowl, combine the oats, edamame, pumpkin seeds and dried fruit.
- In a small mixing bowl, combine the oil, maple syrup and cinnamon. Mix this in with the dry ingredients.
- Line the baking sheet with parchment paper and spread the granola in an even layer.
- Place in the oven and set the timer for 15 minutes.
- When the 15 minutes are up, give the granola a stir to turn it over a bit. Continue baking for another hour and stir every 15 minutes. It will seem a little moist and chewy right out of the oven but will become crispy once cooled.
