Edamame Kale Salad

Ingredients

  • 1 cup Frozen Edamame (thawed)
  • 2 cups Red Cabbage (finely chopped)
  • 3 cups Kale Leaves
  • 3 Garlic Cloves (finely chopped)
  • 1 cup Pumpkin Seeds
  • 1 cup Quinoa
  • 1/2 cup Balsamic Dressing

Instructions

  1. Cook the edamame and quinoa according to the package directions. Place aside.
  2. Massage the kale with your hands, adding oil if desired during the process. Massage for about one minute.
  3. Combine the kale, cabbage, quinoa, and edamame. Drizzle with the dressing and top with pumpkin seeds.
