Edamame Kale Salad
Ingredients

- 1 cup Frozen Edamame (thawed)
- 2 cups Red Cabbage (finely chopped)
- 3 cups Kale Leaves
- 3 Garlic Cloves (finely chopped)
- 1 cup Pumpkin Seeds
- 1 cup Quinoa
- 1/2 cup Balsamic Dressing
Instructions
- Cook the edamame and quinoa according to the package directions. Place aside.
- Massage the kale with your hands, adding oil if desired during the process. Massage for about one minute.
- Combine the kale, cabbage, quinoa, and edamame. Drizzle with the dressing and top with pumpkin seeds.
