Chocolate Soybean Energy Bites

- ½ cup oats
- ½ cup semi-sweet chocolate chips
- 1 – 15 oz can black soybeans, drained and rinsed
- ¾ cup soy nut butter, or any nut butter
- ¼ cup honey or other sweetener choice like agave or maple syrup
Instructions
- In a food processor, add the oats and chocolate chips. Process until the chocolate is chopped finely.
- Add the beans and process until they are well incorporated.
- Add the nut butter and honey and process until mixture is smooth.
- Roll mixture into balls and place on a baking sheet lined with parchment paper. These can be eaten right away but they set up and hold better if put in the freezer for 10-20 minutes first.
- Store in the refrigerator or freezer.
